I read Jen’s blog earlier and saw your addition. I am glad you mentioned moderation…that is my non scientific hunch on stevia. I am still not 100% sold on using it all the time, even though all the research so far says its all good. I think as far as statistics, and research goes, it still needs more time. I understand it has been used for however long by natives, but I am still not sold on it. I agree that it’s the BEST alternative to sugar that does not impact your insulin levels…however, I guess I am one of those people that thinks if it’s too good to be true, it probably is. I use it moderately, and find when I have used more than a little bit in a day I have gotten a headache…so not sure if it’s great for me.

I am a fan of stevia but I also think having a variety of sugars is important too. I tend to go to stevia first just because I can be sensitive to too much sugar. I do love my other sugar replacements like yacon and coconut sugar

Laury, what kind of stevia are you using? It’s always best to go for pure stevia powder grown from your own plants, or to buy high grade steviodide (97%). If you’re using brands like Truvia (or others) and experiencing problems, it could be the erytrhitol that’s causing you problems.

Jo, I do not use Truvia, that stuff isn’t even really Stevia, I have been advising people against using that since it came out (it’s a product of Monsanto as well!). I am using pure Stevia extract….I just feel best using a little Agave Nectar and very rarely using Stevia. I can taste it, and I just feel a little headachy when I use it too much.
