Hey all! Thanks for all the new visitors and don’t be afraid to comment! I love feedback and having a good discussion going! Sorry this is a quickie but Nate’s fam is coming into town and staying with us this weekend so I have to bust it here: doing this workout, heading to work, & home to speed clean entertain!
Here’s a meal you can make when pressed for time! I was so proud of this salad. Not only because it tasted good but because it looked amazing! I’m definitely a visual person when it comes to food, fashion, destinations, art etc. so I probably spent way too much time preparing this thing but it was worth it!
In the mix:
Mixed mesculun, 1 plum tomato, 1 julienned young green summer squash, 2 fried eggs, fresh basil from my herb garden
Dressing: 2 parts apple cider vinegar to 1 part extra virgin olive oil, 1tsp chipotle seasoning 1sp lime juice & chopped chives. I made about 1/2c (what can I say? I love my dressing).
Garnish with more fresh basil, flaked sea salt & freshly ground pepper. Enjoy!

I was so excited to use my new tool: the Kuhn Rikon Julienne Peeler I picked up from Sur la Table. I was lusting after a Japanese mandolin that was like $450…um Nate said no way haha! This $20 gadget was much more in our price range. Maybe someday I can have a super seski mandolin
and this collection: someone buy this for me haha.

I have a jullienne peeler too. I bought it before my spiralizer, and then I kind of forgot about it. So much easier though for fast work and easier to clean. Thanks for reminding me about it!

I love salads! My favorite kitchen tool right now is my new little food processor by Kitchen Aid. I made a strawberry pesto with it and can’t wait to make more stuff!
That salad looks awesome. The only splurgey item in our kitchen is my Kitchen Aid mixer, but it was a Christmas gift from the bf and so the $$ didn’t come out of my pocket. I love it though!

Way to go on the salad! It really looks amazing! I love my spiralizer..my fav in the summer but my fav overall is the Vitamix.–hope you have a great weekend! Have fun with Nate’s fam!!!

i’m totally obsessed with the vita-mix. we got our kitchen aid stand mixer for our wedding but don’t use it often since i got diagnosed celiac :/

I got my julienne peeler at some local Asian market for $1 and love it so much! It’s my favorite kitchen gadget so far and also my Magic Bullet for making my own spice mixture
Speaking of splurging, I think I might break my bank for stocking up ground game meat this coming Wednesday
