lately, i’ve been craving salty eats with refreshing and bright beverages. this might sound odd but i add a little olive oil to this drink and it’s incredibly hydrating!
weekend mornings are spent lovingly preparing these curried egg ‘pouches.’ i say pouch because i stuff them so full of things that a traditional tri-fold omelet are near impossible. i simply fold it in half lengthwise, then cut it so i can scoop out two large packets of eggy goodness. this one had parsley, nutmeg, curry, olives, peas, mushroom & tomato. now you know why i couldn’t flip it
and finally, late afternoon lunches are filled with this bright thai salad. i wish i could take recipe credit* for it but at least now i have a good base to expand into future meals. i’m thinking next time varying it with chicken, thai basil or cilantro & raw julienne fennel bulb! i’m still baffled by people that find paleo eats ‘limiting.’ i’d eat all of these colorful foods 100x over in place of some bland bowl of beige.
*my notes: good quality fish sauce & red pepper flakes are a MUST in this dish

My dad lovesss those alo drinks- I received a sample of them last year and let him try one and he is now addicted.

Can I come over for a meal? both dishes look amazing! Peas and curry go SO WELL TOGETHER…and I love shrimp with asian flavors! that thai salad is GORGEOUS!
