easy rustic autumn soup

i’ve just finished a course of antibiotics and got a sore throat a couple days before the treatment completed. welp, it looks like the ulcer on my throat is here to stay so i’ve been trying to take it easy on the spicy, and acetic foods front. enter in: rustic autumn soup in minutes!

we live in a world where convenience is king, so when i put this together saturday morning i was crossing my fingers and hoping for the best. not only is this nutrient packed but it’s also vegan & paleo friendly! additionally, you can use whatever you have on hand in regards to produce! here’s what you will need. . .

materials:
-2 cups of trader joes organic hearty vegetable broth
-1 medium sized rutabaga (swedish turnip) high in vitamin C!
-1 medium or large carrot
-1 medium zucchini
-1 tbsp coconut oil (or evoo)

method: preheat oven to 350F. wash, dry and peel your veggies and arrange on a baking sheet. drizzle your tbsp of oil over vegetables to coat and roast for 40min turning once halfway through. once cooked, put veggies in a high speed blender and pour 2 cups of trader joes organic hearty veggie broth over roasted veg. blitz for one minute and serve!

that’s it! hearty, nourishing and flavorful! let me know if you try it! utilize the bounty of root vegetables during this season and mix things up :)

    I did almost this exact thing with butternut squash this morning and ate the soup for dinner. But I used curry paste. Because I love curry!

    Yum! I haven’t gotten my soup pot out this season, yet, but I’ve been craving it! I roasted some squash last night, though, so I’m sort of getting my fall on!

    that sounds so good! and easy! except that my blender poops out sometimes, so……… but! a food processor and a new blender are on my christmas list/ to-buy list! :D

      i could not live without my blender! i use the food processor a good bit but man…the vita-mix is used once daily sometimes 2x!

    Perfect!!! I am all about soup these days! Just made pumpkin and red kuro for din tonight. I will def try your quick version…I definitely need that when I have a toddler tugging at my feet!
