my mother-in-law, and some of nate’s sibs recently visited and helped us ‘groom’ our little enchanted garden. it was absolutely lovely to spend time with them (it had been months)! they came bearing gifts from their own garden in central PA. we got a bounty of herbs and veggies and i put them to good work in this salad below:
is there nothing tastier than a summer tomato? i mean really!
here’s a shot of our now well tamed backyard! i can’t wait to add more to it when we muster up some more motivation haha we’re kinda beat from all the indoor work but i’m hoping that we can add a nice brick path or bistro set to have morning coffee and just sit in our little oasis in the city!
we continued on our garden theme and enjoyed ‘liquid health’ in the form of bloody marys the trader joe’s mixer isn’t that sweet which was a relief! i added a bit of sriracha to the mix and we were good to go!
i’m feeling very ‘green’ right now so i started a ’7 day vegan experiment.’ i will post about the meals i made for this week later but i’m pretty excited about it! i’m doing this because i have been in a state of convenience cooking (which translates to me eating jerky out of a bag, tinned fish/chicken and generally eating far too much chipotle). i’ve been getting stomach aches, my energy has plummeted and am feeling thirsty all the time. we’ll see if this does the trick!
today marks day two of my vegan journey and i met up with katie from lilveggiepatch for brunch at eden! i love eating there because i always feel energized and just the right amount of ‘full.’ they cater to those with allergies and people who eat veg*n. look at my lovely lunch date—<3 the pink dress btw!
