checking in on the vegan experiment. you guys, i really thought i’d be struggling by now but i’m still going strong! i’m convinced it’s the delicious food i prepped in advance. my stomach hasn’t hurt all week and i have crazy energy. i went grocery shopping for next week last night and stocked up on all vegan items again. i honestly have no idea how long this will go but i’m really enjoying exploring my options.
this week will go a little like this:
breakfast: green smoothies or coconut puddings (i got a young thai coconut)!
lunch: raw tacos using this recipe
dinners: vegan split pea soup + salad & raw tomato flax crackers or zuke pasta in a lemon-basil-cashew alfredo
snacks: blueberries and walnuts or banana soft serve with maple topping
sigh. you guys…he’s dreamy and i’m turning into a hippie. what gives?
