here it is and boy is is tasty! did i mention it’s healthy too?
several studies have found that vinegar may help lower glucose levels in diabetics. another study in rats found that vinegar could lower high blood pressure or reduce high cholesterol. lastly, a few studies have found that vinegar may be able to kill cancer cells or slow their growth. source
i present to you cold-press pumpkin shrub! you can use this with soda water for a mocktail or add your favorite spirit (our faves are vodka or bourbon).
the how to dos:
1. roast 1 small to medium size pie neck pumpkin (400F for 30-40mins). you can slice and clean the pumpkin pre-roast, or roast it whole if you poke a few holes into the pumpkin–just be careful to let it cool completely before cleaning out the ‘guts’ if you choose the latter method.
2. make simple syrup with sugar. i used brown sugar 1c + 1c water. you can use whatever sugar you like just make sure it’s 1:1 with water. heat over the stove on medium heat until it’s dissolved and pour into a glass* jar. add your pumpkin chunks, and 1 cinnamon stick to the simple syrup mixture and cover with saran wrap.
3. place in fridge overnight or in a dark, cool and dry place.
4. strain your mixture with a nut mylk bag or fine cheesecloth. add 1/2c-1cup of apple cider vinegar. i found it too sweet at 1/2c vinegar so i added the extra ACV to give it a tangy kick!
that’s it! enjoy here’s my current mocktail 2oz pumpkin shrub + 4-6oz sparkling water. it’s the perfect autumn fizzy weeknight drink. feel free to ‘spice it up’ a bit on the weekend with an ounce of bourbon or vodka for a nice little sipper. x-m
*do not use plastic as the acidic nature of the vinegar can eat away at this material over time. please use glass for storage
